Bicycle touring!

One of the things that I want to start doing in 2012 is bicycle touring.  I want to get on a bicycle and just start riding, totally self supported throughout the US and maybe even some other countries.  I have poured over every article I can find, and looked at pictures taken by those who have traveled many, many miles and experienced many different cultures and vista's throughout the world.  I have a Surly CrossCheck that is part-way converted to being a good tour bike.  All I need is some front panniers (I already have Ortlieb rears) and change the drivetrain to MTB gearing in order to be able to climb hills while loaded.  Otherwise, it is good to go.  However, I really want to get a Bike Friday much like this one:
